The Contextual Influence of Prior Foods on Healthiness Perceptions

چکیده
Perceptions of a food’s healthiness are a critical input to consumers’ decision making about what to eat, and therefore understanding factors that influence these healthiness perceptions are important. We examine the role of prior exposure to other foods in impacting healthiness perceptions. We propose and find that the healthiness of foods previously encountered can influence healthiness perceptions and consumption intentions for ambiguously healthy snacks, and importantly, this influence differs based on one’s self-control. Consumers who encounter a healthy food first tend to assimilate healthiness judgments and indicate increased consumption for subsequent, ambiguous foods when their personal selfcontrol is low. This influence of prior healthy foods has implications for consumers and public policymakers since foods are often presented alongside other healthy foods (e.g., in the same grocery store aisle or on the same restaurant menu). Our work establishes the relationship between previously encountered foods and trait self-control as a driver of subsequent healthiness perceptions, and we expect that future work can further explore these patterns.

Recent studies report that using green labels to denote healthier foods, and red to denote less healthy foods increases consumption of green- and decreases consumption of red-labelled foods. Other symbols (e.g. emoticons conveying normative approval and disapproval) could also be used to signal the healthiness and/or acceptability of consuming such products. The present study tested the combine...
متن کاملSources of bias in peoples' social-comparative estimates of food consumption.
Understanding how healthfully people think they eat compared to others has implications for their motivation to engage in dietary change and the adoption of health recommendations. Our goal was to investigate the scope, sources, and measurements of bias in comparative food consumption beliefs. Across 4 experiments, participants made direct comparisons of how their consumption compared to their ...

We explore the feasibility of contextual healthiness classification of food items. We present a detailed analysis of the linguistic phenomena that need to be taken into consideration for this task based on a specially annotated corpus extracted from web forum entries. For automatic classification, we compare a supervised classifier and rule-based classification. Beyond linguistically motivated ...
